Sure. It would have to be one from the same class, or the docking clamps wouldn't match, though. I would imagin that during the Dominion War, there may have been Galaxy Class ships which were repaired this way after a battle.
Hmmmm. You've just inspired me. I've just decided to have that as part of the background in my post-Dominion War campaign.
Could the main sections of some ships (i.e. Miranda and Nebula classes) be rejiggered to fit their base classes (Constitution and Galaxy)? As far as I can tell, all that need to be done is ripping off the warp nacelles and installing docking clamps/turbolift connectors. Or you could even leave the nacelles on - allow the saucer to travel at warp, and boost the top speed of the ship.

Flying along at high Warp, when all of a sudden the clamps give way, and the saucer lifts off over the rear of the ship (like the old bonnet-flipping-up-over-the-windshield routine), blocking the view from the Battle Bridge of the secondary hull...
And you hear this almost-nasally voice (and reply) coming from within:
"I can't see s**t, can you?"
"No problem, son, no problem."

In some sources, SF just bolts down a saucer to a new warp drive section to test ou the performance. These may be custom saucer for this job or maybe not!

ah hell the ships been up on cinder block fer a while now. we found and old 2332 galaxy class stardrive section, we oiled the plasma intakes, fine tuned th V-8 impulse drive, dropped the warp core and slapped in some newly grease bearing. It'll haul like a scalded dawg now. Bubba found a saucer from a 2345 Intreped class, it don't even get near a good fit, but that an't nuthin some duck tape and screws can't fix.

Sure. In example -- you can mate a Rapier-Class saucer section to a Sovereign-Class star-drive section. You just need a saucer section that's been designed to have a "universal collar/airlock" system that can expand/retract as necessary to meet the specific ODN/EPS, docking-clamp & turbolift situations.
