My original game of the 80's used Constitution, NCC-1700 (TOS).
My first LUG-Trek game started out on the Galaxy-class Quetzalcoatl, NCC-72249 and moved to her sister ship, the Galaxy-class Icarus, NCC-72248. We had a miniseries on the Defiant-class H.G. Wells, NCC-75890.
Our current TOS game is set on the Constitution-class Icarus, NCC-1071.

Since I'm GMing a Venture Class Scout group based campaign we have several ships, not to mention the multiplicity of NPC vessels that have been encountered, both Federation and Non-Federation:
Initially we had three Venture class scouts:
USS Tiananmen (In honor of Tiananmen Square)
USS Manzanar (In honor of the Japanese Camp located in MidEastern California)
USS San Pasquel (In honor of the only battle fought in California during the Mexican-American War)
However the San Pasquel was destroyed in an encounter with Orion Pirates. Thus was replaced with:
USS Fullerton (I forget why I named her that, but I'm sure there must be a reason. If there is, some one tell me)
In the future they're group is going to supplemented by two Danube Class Runabouts. I'm naming these after local major rivers:
USS Sacramento
USS San Joaquin

Sadly, after last week's game, all that's left of the old Ambassador class USS Santa Maria is the saucer section. The engineering section was remotely piloted on a collision course and rammed a Romulan warbird.
I'm leaning toward a Nebula for the next ship, probably named USS Bonaventure.
What mottos or quotes did everyone have for their ships' plaques? Santa Maria's was "Cruising on the Santa Maria, Searching for a Brave New World". Bonaventure might have "The Wild Winds of Fortune Shall Carry Us Onward, Withersoever They Blow".

The group that I used to play with had about a half dozen ships over the course of about two years. All of them were destroyed (usually by the crew's stupidity), except for the last two. We finally started to wise up. The survivors were the U.S.S. Argo, a Defiant class ship, and the U.S.S. Khitomer. The Khitomer was originally a New Orleans class, which was destroyed. Later, an Akira class ship was given the name.
In the 80s I was Captain of the USS Athena (Miranada/Reliant FASA) and ran a campaign on the USS Lexington (Constitution Refit/Enterprise FASA)
The first LUGTrek game I played in I was Captain of the USS Exeter, Ambassador class.
My current campaign began on the USS Farscape a Nova class surveyor...then moved on to the USS Endeavour (Nebula class) who dedication is "Leave nothing untried..." In 2 years (game time) if all goes well they will be posted to the USS LExington a Soverign class...wish them luck
Other ships that been mentioned are too numerous to mention here, but one of the most important was the USS Saguenay, a Chyenne class...her destruction lead to a series of time travel episodes that are still being felt to this day

My crew have pretty much been on canon ships throughout the years we've played.
Of course they are or were all ships doomed to die in some away.
The newest ship the Akira class protype is what my boys are running around on now.
