Am I remembering something wrong? Between seasons 6-7 didn't the Federation attack Cardassia Prime and get bogged down for 3 months? I could swear that's what I just watched, and now that I am looking through my DVD's I can't find it now.

Yes, I think you are remembering it wrong, they got stuck on a few systems, such as Chintoka, where they suffered tremendous losses, due to the Breen weapons, but they didn't circle Cardassia Prime till the second last episode for the giant-let-down-lack-of-a-fight

No, the Federation didn't really reach Cardassia Prime until the end. They did send aid to Damar's rebels for a few months though. There were a couple of battles in the Chintoka system caused by the shifting tides of war (especially as new powers joined in the war). The Federation did take several months to liberate Betazed.
BTW, Steve Long's Domnion War Sourcebook is invaluable for giving a good overview of the war. It free too!
