I gotta wonder—how often do 1500 people get landed at once in modern military operations?

Not often, however a MEUs ground force element would normally be divided among the Expeditionary Strike Groups' LHD, LSD, and LPD, and would normally not all go ashore at the same time. Their just isn't that much lift and float capability to get them all ashore at the same time, that I am aware of.
That being said, having the ability is useful, even if not used, as occurred during Desert Storm.
In 2008 there was a combat amphibious landing of 450 AU soldiers. In 1974, the Turks landed three thousand soldiers onto Cyprus.
