I've got the TOS Rulebook. Are there any rules that are in the TNG or DS9 core books that should be in the TOS core book?

The only significant difference I can think of is that the starbase rules from the DS9 core book might be useful. Otherwise, the content is very similar, just tailored for each series.

I might have been blind and missed it, however I needed a Science Officer and found no Academy skills list for that discipline and so used the one in TNG book.

You're correct. There's no Starfleet Academy Life History package that is specifically geared towards science in the TOS sourcebook. I'm not sure if that was an oversight or intentional, but a science officer doesn't necessarily need a science-specific Academy Life package. In fact, it might help force the science officer character to become more well-rounded.
