But for roleplaying . . . I would say I would run with the Theta Class in the Federation Icon book. Or alteast I think that's what its named. Basically the Scout from Insurrection. Sleek, decent speed, and a decent armarment.
I onced used it by tweaking it with one full size photon torp launcher. Only carried 5 torps and cut the cargo by almost all. But it was fun to see the supprise on the enemies face when it did have to come in use.

Had to go for the Intrepid - sleek, sexy, fast, not too big, and can do just about everything a Galaxy can do (just on a smaller scale).
When you are dead, you don't know that you are dead. It is difficult only for others.
It's the same when you are stupid...
The Reliant class (Miranda? Who names their ship after their mother-in-law?!) is a close first, but it's sadly lacking in a well-defined deflector array. Oh, well.
Second would be Intrepid class, third the Defiant class.
