For movie period, I like the COnnie -- the players know what the ship and he interiors look like.
For TNG, I like the Galaxy for the same reason.

Again, it depends on the era. But I like the smaller, and/or better established ships. Smaller allows you to generate the major NPCs much easier, and if you want the entire crew. Well-established means the players know what you're talking about when you send them to the Science Lab, for instance. And they know exactly what the layout of the major areas, such as Bridge, Sickbay Engineering look like. Thus for TOS era I lean towards Consitution class/Saladin class. For the TMP period onwards, either Constitution or Miranda class, and for TNG onwards, I like the Intrepid class as a smaller, well-established ship.
I often like to go off the beaten path when I run games. I tend to gravitate toward the smaller ships, since you don't have to be a commander with an ungodly number of years under your belt to be a department head.
For TOS/Movies, I like to go to one of the frigates (Chandley or Northampton) or destroyers (Wilkerson), or, even an escort or a scout.
In TNG/DS9, I'd probably run a Steamrunner or a Saber. If I run a bigger ship, I'd go with one of the mini-Galaxy types.

I tend to agree with Sea Tyger, and use smaller ships. When I was playing FASA Trek all those years ago, I was the captain of the Larson-class destroyer USS Abramson. Now that I'm actually running the show in my own game, I'm putting the PCs in a small escort vessel for when they need to run around, and on a starbase for when they don't. (And by small, I mean a ship with a crew of 43...44 if you count the Klingon observer.)

Does anyone use the Nova class surveyor? If so do you like it?
I haven't used it, but I think it would make a good NPC ship. I believe that the PC's ship should be versatile, and a surveyor is too specialized to allow me to throw different types of adventures at them.

Going by the Equinox's performance, I'd say they're actually both a nice size, and a more versatile ship than just a surveyor.
When I created the ship the only reason I called a Surveyor was it was canon. I am thinking about using the Defiant or the Nova. What would you go with for Deep Space exploration?
Intrepid class is designed for deep space exploration. Nova's more a science ship. Defiant class will drive your crew crazy because it is so crampt. Nobody sane would send one of those into deep space! That crew would never be heard from again.
Here's an idea: How about a refit Constellation-Class? I like the idea that the 4 warp nacelles exist for redundancy, allowing for higher cruising speed over long distances.
I would consider that but it is way too big. We are a small simming groups needing a Ccaptain, First Officer, Engineer, Medical, Counselor. I wanted to stay small. that's why i picked the Nova, Defiant. I like the Intrepid. Pros/COns of Nova, Defiant, Intrepid for all types of space travel.
Constellation Class is smaller than Intrepid class. It was the class of Picard's old ship.

Which isn't actually all that big either, if you have a good look at the study model.

I would go for the Nova class, but give it an Endgame style refit, a la the Rhode Island (Kim's future ship). Thatway you get around any problems with the ship being fitted out for short range science missions, and get to keep a nice neat little ship.
