The Daedelus and Ranger are in the SOM; the Oberth didn't make the cut, that I know of. But the TOS Connie (both pre and post-refit versions) are in the Starships book.

As mentioned elsewhere, the Daedalus and the Ranger are in the Starfleet Ops Manual, and both the Oberth and Constitution-class are in the NG. However, if you look closely, you should see that the stats for both versions of the Constitution are given in Starships, but only the refit is picutred.
