I was wondering ..for ships that are not mentioned in any of the published material, like Schimitar or Valdore or the ships in Enterprise.. will they be in a future supplement, like is there any plans on that?

I'm sorry, I have no information on any future products. I am not affiliated with Decipher.
Should Decipher ever elect to put out a companion, sequel (Starships Vol. 2), or request my talents to construct additional ships, rules, systems, and/or maneuvers, I would be pleased to do so as a freelancer.
