While not specifically ENT related, a good sourcebook to mine for ideas would be "Star Trek Concordance: The A To Z Guide To The Classic Original Television Series And Films" By Bjo Trimble. You can use this to look up critters from the TOS era (since they aren't that far apart).
This gives a decent overview of TOS, The Animated Series (Paramount can die with all the 'non-canon' rubbish it spouts), and the Films, and characters and critters from the various stories. Lovely artwork in it to. Worth looking up.
There is also the on-again-off-again printings of the Star Trek Logs, Vol 1-10. Novelizations of TAS by Alan Dean Foster. hard to find but worth mining for ideas as well.

Given my perfectionist's eye for details, I am hoping to get some input on a couple more issues for this Series.
1. What kind of food production resources do you suppose one would find on a space station of this era (given that there are no resplicators)?
2. Would this station be likely to house/support humand (or other) commercial ventures (i.e. Bob's Used Starships, Droids 'R Us, etc.)?
3. Since I've already said that the Vulcans and Andorians are both involved, what specifically can you imagine them contributing to the station?
4. Would a station of this type house marines or other ground forces, or just station security?

For (1), I'd say that they have the standard protein resequencers for most simple meals. The commanding officer and senior staff may have an "Officer's mess" with a real chef and food. And don't forget eateries on the station in private hands.
For (2), They probably have several shipping companies with offices on the station, a maintenance shop, maybe a bar like the one in "The Trouble with Tribbles". And don't forget people like Cyrano Jones, offering "great deals" and rare treasures from all over the quadrant.
For (3), The Vulcan would of course want to use the station as a science and sensor platform, if a couple of Andorian systems are nearby, then this will be the reason that the Andorians will want some of their own personnel on the station as the beginning of formal relations with the pink skins and keep an eye on the Vulcans at the same time. Maybe they'll offer a technology exchange for something Starfleet or the Vulcans have.
For (4), Unless they're in a warzone, the station should only have security personnel as the main force. There might still be a small MACO team to respond to anything that might require action away from the station and their special skills. Sort of like a SEAL team.

I've been working on Trek RPG stuff for several weeks now (since my job was eliminated and I'm waiting 'til July to begin my new one), and I recently stumbled across my <i>Enterprise</i>-era Series notes.
I've really been scouring the Internet for information about the Xindi, but have also worked to cobble together some statistics on my own as well.
The Xindi consist of five sub-races (with the sixth - the Xindi-Avians - extinct due to global warfare/destruction of the Xindi homeworld):

Xindi-Arboreal
Xindi-Reptilian
Xindi-Insectoid
Xindi-Aquatic</b>
I really like the Xindi as an enemy race, and think that - even though the situation regarding their Earth-shattering weapon will likely be resolved shortly - I will continue using the Xindi-Reptilians and Insectoids as enemies regardless. They're just so <b>nasty</b>!
Anyway, I've also worked on integrating the Suliban Cabal, the Sphere Builders, and the Breen into this campaign. The Minosians and their "Arsenal of Freedom" have a "military surplus" outlet on the station, and this will be a Garak-esque source of intrigue for the players. There is also a Tellarite mining consortium office, an Axanari diplomatic detachment, and a Vulcan Science Directorate outpost.
Yet another MacGuffin I've opted to toss in is an temporally-unstable wormhole to the Delta Quadrant, the terminus of which is situated in 2342. The other end is in Breen-controlled space, and they have used the wormhole to capture lone Trabe vessels, enslaving their Kazon and Trabe crews and reverse-engineering the technologies on which their ships are based. The Breen, of course, sort of recognize the issues of temporal contamination and altering the future, but they don't particularly care one way or another. They just get a technological edge, slaves that are strong and stupid (Kazon) and devious and intelligent (Trabe), and a pipeline to another quadrant. One of the Episode arcs I'm planning is to have the crew discover the wormhole and work to collapse it (heh heh heh!).
Since I've decided that ES-1 is near the Expanse, the Xindi will play an important role there. So will the temporally-displaced NX-01 captained by the half-human/half-Vulcan Lorian, though I'm not exactly sure how just yet (please post some ideas).
I've got a whole notebook full of supplemental ideas as well, but we'll just have to wait and see how things pan out.

Having learned a little more about the Xindi, I've made some modifications to my plans. While they are like to remain an adversarial species, I'm beginning to make room for the Romulans and/or the Klingons.
The Romulans - destined to be the primary enemy (ala the Earth-Romulan War c.2156-2160) - are very likely to make their presence known (while remaining completely unseen by humanity, Vulcans, Andorians, and so on). Oh, and I'm looking for some 22nd-century Romulan starship designs.
The Klingons - space vikings that they are - are also likely to show themselves with some frequency. Despite their aggressive behavior, I really think that they don't become so anti-human until they ally themselves with the Romulans (perhaps when they acquired cloaking technologies). Did they have them in TOS (prior to the films)?
The Suliban are also going to be around in their own subversive way. I think there might even be some former or non-Cabal members aboard the space station.
