I think this is a call for the Narrator to make. I can see how stacking the bonuses would make sense--you're covering your buddy and he's covering you.
But I think if I were narrating it, I'd just give the pair of knights one +2 bonus, and not stack them.

Sorry about that, aelius, thougth I'd posted that...
The official response is that the +2 bonus does not stack. Mind you, a Knight can confer this bonus on any companion who is fighting by their side while using a shield, whether they are a knight or not.
