What kinds of lores? The system is so flexible, you could come up with Lore skills and specialties for just about anything.
And I think there are only so many languages...
Sindarin
Silvan
Quenya
Westron
Rohiric
Khuzdul
Easterling
Orkish (dialects)
Black Speech
Entish
Drúadan
Haradric
Khand (Khandish?)
I'm sure there are others. Those are just off the top of my head.

I can remember the following from MERP:
Waildyth (sp?) - a Beorning nature-signals language
Atliduk - not sure who spoke this, but I think it was their half-Dwarves
Logathig -again, can't remember whose tongue this was, but I suspect Easterling
Upon checking my copy of MERP, I see that:
Apysaic is a Haradric tongue.
Atliduk is a Beorning tongue.
Dunael is the Dunlending dialect of Adunaic.
Kuduk is that the Hobbits call their dialect.
Logathig is an Easterling language.
Nahaiduk is a Woodmen tongue. My guess is that it is connected to Atliduk.
Umitic is their Half-dwarf tongue.
Varadja is the Variag tongue.
Waildyth is the nature-signal language used by the Beornings.
Not sure how much, if any, of this is pure Tolkien, but there you go...

I will decide on the languages for my games and character sheets...I like having it a bit more diverse.
As for Lore, I know the book has the bases of: Group, History, Race, Realm and Region.
I noticed that some characters statted out have Race (man) and some have Race (Rohan)...what's the point? If Elrond is trying to figure out something about the rohan...he still gets the +2 as it fits within the speciality, doesn't he?
Why would anyone specialize that MUCH when "elves" or "men" seems to be an acceptable all-around answer/specilization?
(Personally I am in favour of more definitive specilizations for each race/region/etc. but going by the rules as written is kind of important...If I was going to make up everything anyways, I wouldn't have bought the books!)
See the Lotr companion published on the Gwaith-i-Mirdain website. It delineates a more specific set of Lore groups.
I personally think their approach is more realistic. A simple hobbit of the Shire would likely know a fair amount about the Shire and its peoples, but little about the history of Gondor. Yet the Lore:History , Lore:Culture, etc. skill groups gives the hobbit very broad knowledge about Middle-earth with a "specialization" in hobbit lore.
